Review: I would not say I’m a gin lover but I do enjoy a nice gin cocktail. Be it a refreshing Bee’s Knees or Gin and Tonic the floral juniper notes are often over powering if not handled with precision. When I came across Trillium Pink Pinot Gin from Trail Distilling I decided to give it a try to see what kind of impact a wine barrel could have on such a bold spirit. Aged for approximately 6 months if fresh dumped Oregon Pinot barrels the gin has a subtle fruitiness and oak notes that are not found in other gins. It can not be mistaken for any other spirit but the juniper notes due feel a little subdued and more cohesive. Add the beautiful slight pink color and you have a bottle worth adding to your bar.
