Notes: The amount of umami flavor that gets packed into these vegan meals out of Portland, OR will make you forget that it is meatless. The mushrooms are balanced nicely with the other veggies in this meal. The calories are enough to fill you up but the meal does not weigh you down or make you feel sluggish after eating. Because of this I think this would make for a great lunch time option all though the rehydrate time is a little long. Cheers!
