Taste: Mild spice with deep flavors

Texture: Reminds me of cauliflower rice despite having no cauliflower. All of the ingredients rehydrated nicely.

Notes: Itacate is a small company out of California that was started by a Mexican immigrant who was craving the flavors of home out on trail. This vegetarian stew does not pack a lot of calories but is filling and I felt plenty fueled to continue hiking on trail, making this a great lunch option. In my opinion it could have used a little more spice but it was a delicious alternative to the standard dehydrated meals on trail. Cheers!
